Urad is also commonly known as Black Gram comes from India where it has been cultivated since ancient times and is one of the highly valued legumes in India. As the name suggests, whole black gram is black in color and shelled gram is white in color. These small split white grains are known as Urad dal in India.
White Urad Dal is whole or split urad with the skin removed. These lentils are creamy white in color and have a milder flavor than whole Black Urad Dal. It is very nutritious and rich in protein. Urad dal lentils are very easy and quick to prepare, and the dishes are very aromatic and delicious.
In the kitchen:
Often called white gram, these creamy white lentils are used in purees and soups. It is also a special ingredient added to flour for baking breads, dosas (pancakes), idlis (steamed cakes) and sweets. Soaking is not required.
