Indian Black Salt also known as sulemani namak, black salt, kala loon, or Kala Namak, is a salty and pungent-smelling condiment used in South Asia. The condiment is composed largely of sodium chloride with several impurities lending the salt it's color and smell. The smell is mainly due to its sulfur content. Due to the presence of Greigite in the mineral, it forms brownish pink to dark violet translucent crystals when whole and when ground into a powder, it is light purple to pink in color. Black salt (Kala namak) is used extensively in Indian cuisine as well as in Ayurvedic medicine. Kala namak has a distinctive taste. It is used in chutneys, raitas provide the tangy fresh flavor in chaat and many other snacks. It is often used by people with high blood pressure or on low-salt diets because it does not contain significant amounts of sodium. It is also believed to relieve both heartburn and flatulence.

Black salt is a mined mineral salt that can sometimes be found in large, black crystalline chunks. The black salt we use in cooking is actually a pink powder and it has a distinct sulfurous aroma that dissipates to some extent during cooking. Black salt goes well in vegetable dishes and with seafood. Chaat masala, an Indian spice blend, is dependent upon black salt, among other ingredients, for its characteristic aroma and flavor.
