Traditionally, Tandoori Masala is used to prepare dishes baked at high temperature in a clay tandoor oven. It can be used as a marinade with an intense flavor and beautiful color, thanks to which baked, fried or broiled meat develops a crispy crust, while the inside remains juicy and tender.
Most often, it is combined with water or yogurt, lime juice, tomato puree, as well as chili, garlic and ginger paste. Masala is also an ingredient in some curry dishes. It can be used to season meat, fish and sauces.
