From the same family as Sichuan pepper, Timur pepper comes from Nepal. It has the same properties of tingling the tongue and numbing the mouth, which makes it a perfect addition to fish, meat and vegetable dishes. It is distinguished by an intense citrus aroma with notes of grapefruit. In Nepal, Timur pepper is commonly used in dried vegetable dishes, especially potatoes, and also added to tomato dishes and curries, often with pork. It is an integral part of Nepalese curry and spice mixtures and is very popular in the country.
