Asafoetida (Hing) Vandevi
Hing is one of the most important spices used in traditional Indian cuisine that supposedly helps digest legumes. Asafoetida is made from the dried roots of ferula asafoetida. It has a strong flavor and is used in Indian curries, chutneys, pickles, etc. Add a pinch of asafoetida to general curries or dal to bring out the full flavor while cooking. You can also add it to meat marinades. It is often mixed with flour and turmeric for its full flavor.
