Popular in South India, Idli rice (idli/idly rice) is Indian parboiled rice. It has a white color and fluffy texture after cooking. Cooked rice provides a unique aroma and amazing taste. It is used specifically in the preparation of Idli (rice fritters traditionally made with steamed fermented rice dough), which can be served with sambhar or chutney. Idli rice is also used to prepare Dosa (thin pancakes originating in South India).
