Guar beans
These beans are most often eaten in curries, steamed or boiled in water, or prepared as French fries. Compared to our traditional green beans, guar beans are smaller and flatter. It is also more bitter. This flavor is soothed by adding coconut flakes, tamarind or jaggara (unrefined sugar) during cooking. The guar bean seeds are dried and then mashed. This is how guar gum is made. This flour is used as a thickening agent instead of gelatin.
