Urad is also commonly known as Black Gram comes from India where it has been cultivated since ancient times and is one of the highly valued legumes in India. As the name suggests, whole black gram is black in color and shelled gram is white in color. These small split white grains are known as Urad dal in India.

White Urad Dal is whole or split urad with the skin removed. Urad Split are split, unshelled black lentils. These lentils are black and creamy white in color. It is very nutritious and rich in protein. Urad split lentils are very easy and quick to prepare, and the dishes are very aromatic and delicious.

In the kitchen:

Black broken lentils are used in purees and soups. It is also a special ingredient added to flour for baking bread, dosa (pancakes), idlis (steamed cakes). Soaking is not required.
